Lemon and Honey Cupcakes
2 cups plain (all purpose) flour
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp sea salt
Zest and juice of one lemon
1/4 cup sour cream
1/4 cup milk
1/2 cup butter
1/2 cup honey
2 eggs
1. Preheat oven to (350).
2. Sift together flour, baking soda, baking powder and sea salt; set aside.
3. In a small bowl, combine lemon zest and juice, sour cream and milk; set aside.
4. In a mixing bowl, cream butter until fluffy. Add honey; mix well. Add eggs, one at a time.
5. Add half of the reserved dry ingredients to the butter mixture; mix on low until just combined. With mixer running on low, slowly add the lemon mixture.
6. Add remaining dry ingredients until just combined.
7. Fill cupcake liners 2/3 full.
8. Bake 18-22 minutes, or until a toothpick comes out clean.
9. Allow to cool before frosting.
Makes 12-14
Lemon Honey Cream Cheese Frosting
1/2 cup butter
1/2 cup cream cheese
2 tsp lemon zest
2 - 3 tbs lemon juice
2 tbs honey
2 -3 cups icing (powdered) sugar
1. In a mixing bowl, cream butter until light and fluffy.
2. Add cream cheese; mix well.
3. Add lemon zest and juice, and honey; mix well.
4. Add powdered sugar, 1 cup at a time, until desired spreading consistency.

No, you can borrow mine, lol. You surely have a sieve or a spaghetti strainer? You can use either one of those. Place it over your bowl, measure your ingredients in, then tap the edge with your hand or press through with a spoon (if there's lumps in it). Or you could place ingredients in a food processor for a couple of turns, or use a wire whip. Any of these will aerate it plenty and loosen any lumps which is the basic goal using a sifter. Where there's a will there's a way Michael. ~smile~
